I don't care if you like carrots or not. It does not taste like carrots or the squash that it will look like. It is sweet and dellicious.....like a dessert. Try it, it is easy.
Made famous by Piccadilly's Cafeteria style restaurant in the south.
Piccadilly?s Carrot Souffle
Carrot casserole. Prep Time: approx. 5 Minutes. Cook
Time: approx. 45 Minutes. Ready in: approx. 50 Minutes.
Makes 8 serving
Ingredients
? 1 3/4 lbs peeled carrots
? 1 cup sugar
? 2 tab flour
? 1 1/2 teas baking powder
? 1 1/2 teas vanilla
? 3 eggs, well beaten (with electric mixer)
? 1 stick margarine or butter, softened
? dash of salt
? dash of nutmeg (if desired)
Preparation
? Steam or boil carrots until very soft
? Drain well
? Transfer to large bowl and immediately add sugar, baking powder, and vanilla
? Beat with electric mixer until smooth
? Add flour and salt & mix well
? Add whipped eggs and beat well
? Add butter & blend well
? Pour into a 2 qt baking dish or souffle dish and bake in a 350? preheated oven for 1 hour or until top is lightly golden brown
? Remove from oven, and sprinkle with powdered sugar & dash of nutmeg (if desired) before serving
